A newly published open-access article delves into the critical role of food consumer behaviours in steering the transition towards a Safe and Just Operating System (SJOS) within the agri-food sector.
The study highlights how shifts toward healthier diets and significant reductions in food waste can mitigate environmental degradation and enhance public health. However, questions remain about how these transitions align with socially responsible thresholds.
Using a scoping review approach, the authors map evidence on the drivers of these demand-side changes, offering valuable insights into transforming the EU agri-food system. Their findings underscore the importance of consumer behaviour in achieving a sustainable and equitable food system.
